Relive the flavours of your youth with these chicken wings marinated in authentic ‘Made in Jamaica’ jerk seasoning. Keep a supply in your freezer for an easy family meal or impress unexpected guests in about 40 minutes. Can be served hot or cold.
Jerk is a unique Jamaican seasoning or marinade made from a combination of Pimento (also known as allspice or Jamaica pepper), Scotch Bonnet Pepper and other spices and herbs. Both pimento and scotch bonnet pepper are indigenous to Jamaica. Incidentally pimento is the only spice native to the “New World”.

Prepare your outdoor grill with a medium-high fire, place marinated chicken on grill and let cook for at least 40 minutes or when juices run clear when pierced with a fork. Just before chicken is fully cooked using a silicone brush baste to keep chicken moist and juicy.
Preheated oven to 215°C
Place chicken pieces on greased baking tray
Bake uncovered for 20 mins.
Remove chicken from oven
Reduce temperature to 180°C
Return chicken to oven for 12 mins.
Remove chicken and baste with oil and lemon juice mix
Return chicken to oven for 5 mins.
Remove from oven and cover
Oil and lime/lemon juice glaze
1 tbsp olive oil
¼ cup fresh squeezed lime/lemon juice.
Serve as finger food or as a meal with boiled corn, baked sweet potato or grilled vegetable.
Guide: Allow 1 kg to serve 5 people or 3 hungry men.
