The ultimate Jamaican comfort food. In this jamaican oxtail recipe, the oxtail is slow-cooked until meltingly tender. Oxtail is a centrepiece dish for any special occasion or Sunday dinner.
Ingredients
½ kg oxtail
55 g Oxtail Seasoning
Oil for browning
Water to cover
Canned butter beans (added at end)
Method
Use 55 g seasoning per ½ kg of oxtail. Coat meat thoroughly.
Marinate under refrigeration for a minimum of 2 hours.
Heat oil in a heavy-based pot and brown the oxtail for 10 minutes over medium heat, turning frequently.
Add water to just cover the meat. Cover the pot and simmer on low heat for approximately 3 hours until cooked and tender.
Alternatively, use a pressure cooker for 30 minutes for best results.
Add canned butter beans 5 minutes before the end of cooking time.
Serve with rice and peas or white rice.
