Jamaican Tradition
Jerk seasoning was originally developed as a method of preserving meat in the tropical heat. Jerking involves marinating meat with a potent blend of indigenous spices like pimento and scotch bonnet peppers, then slow-cooking it over pimento wood fire.

Recipe: Quick ‘Shake N Pan-fry’ fish fillet
This is one of my favourites to prepare when the call is “What’s for Dinner” and I have other jobs to complete. For a quick meal with under half hour preparation time.
Components
- Fish fillet (or cutlet)
- Heaped tsp Jerk Seasoning (or Fish Spice) per fish fillet
- Lemon juice
Instruction
- Drizzle lemon juice over fillet and pat dry.
- Add Jerk Seasoning to a freezer bag. Place fillet inside, seal, and shake to coat evenly. Marinate for a few minutes or overnight for a deeper flavour.
- Heat a frying pan over medium heat and lightly coat with butter.
- Add fillet and cook for 2-3 minutes per side or until cooked through.
- Serve with microwave-baked potatoes and a fresh tossed salad for a complete meal in under 30 minutes.

Jamaican pimento, onion chips, garlic, paprika, Jamaican ginger, celery, mustard, crushed, Jamaican Scotch Bonnet pepper, salt, sugar
