Directions For Oven
Preheated oven to 215°C
Place butterfly chicken on greased baking tray with its wings on the tray and bony insides facing up.
Bake uncovered for 25 mins.
Remove chicken from oven
Reduce temperature to 180°C
Return chicken to oven for 18 mins.
Remove chicken and baste with oil and lemon juice mix
Return chicken to oven for 5 mins. or until cooked
Remove from oven and cover with foil until ready to serve
Oil and lime/lemon juice glaze
1 tbsp olive oil
¼ cup fresh squeezed lime/lemon juice.
Serve with rice and a salad.
If Jamaican, you may prefer to serve with rice and peas or green bananas, fried plantain and callaloo.
