Jerk BBQ Sauce – Rich, fruity, smoky BBQ sauce infused with the unique flavour of Jamaican jerk.
Do you know the words ‘barbeque’, ‘tobacco’ and ‘hurricane’ were derived from the Arawaks (Tainos), the original natives of Jamaica? Although not the first inhabitants, the Tainos settled Jamaica about 800 CE (Common Era). Thus the word barbeque, now shortened to BBQ, has been around for centuries.
Most Australians were brought up thinking the BBQ is all Australian. Sorry to disappoint, but BBQ is not an Australian word.
Interestingly the Tainos also established jerking, this authentic method of Jamaican cooking. It involves placing highly spiced meat over a pimento wood fire and allowing it to cook slowly. It was a local option to salt curing which helped to prevent spoilage in the tropical heat. The liberal amounts of indigenous spices and peppers preserved meats and made them taste delicious when cooked over the open fire.
Jamaican jerk should not be confused with jerky. The term Jerky refers to lean meat that has been trimmed of fat, cut into strips, and then dried to prevent spoilage. Cited as originating in the 19th Century from the American Spanish work charqui (translated to beef jerky or jerk), the Jamaican term Jerk has a much longer history.
Jerk is a unique Jamaican seasoning or marinade made from a combination of Pimento (also known as allspice or Jamaica pepper), Scotch Bonnet Pepper and other spices and herbs. Both pimento and scotch bonnet pepper are indigenous to Jamaica. Incidentally pimento is the only spice native to the “New World”.
So why not combine your knowledge of BBQing with our Jerk BBQ for that memorable flavour? Today Jerk cooking has progressed from cooking in the ground to the familiar sights of the steel drums or “Jerk pans”, BBQs or kitchen ovens.
Great on sausages, ribs, burgers and all grilled meats. Perfect to use with chicken or pork when slow cooking in oven. Finish on grill, brushing sauce generously on cooked chicken pieces or pork chops and grilling on medium heat for 3 minutes, turn once.
