In some instances sweet potato flour is best used in combination with other flours (particularly nut-, rice-, and traditional wheat flours). Sweet potato flour can generally be substituted for up to 25% of the total flour in a recipe. In certain applications sweet potato flour may allow for substitution up to 100%.
Based on traditional physical properties of dough and bread, a 5% addition of sweet potato flour to wheat flour yields acceptable doughs and breads. Based on sensory properties, wheat flour replacement with 10% sweet potato flour yields good quality breads.
Because sweet potato flour has a lower cooking point than traditional flours, baking times may need to be adjusted accordingly.
