Fish Spice powder
Uses: Sprinkle over seafood and fish before cooking. Also add it to fish soups, fried, steamed or grilled fish recipes. No additional salt is needed when added to food.
Good for Shake and Panfry fish fillets (substitute Fish Spice powder for Dry Jerk Seasoning. See Dry Jerk Seasoning for recipe)
Recipe for Escoveitched Fish
1 Kg fish (whole fish or pieces of sliced fish, use firm meaty fleshed fish, such as Red Snapper, Bream, King Fish, Tilapia)
2 tbsp Fish Spice
½ cup oil
Sauce ingredients
¼ cup sliced onion
¼ cup sliced green sweet pepper (green capsicum)
½ cup sliced red sweet pepper (red capsicum)
1 bay leaf
4 pimento seeds (allspice seeds)
1 tbsp oil
2/3 cup vinegar
1¼ cups water
Season fish with Fish Spice. Fry in oil. When cooked remove and drain.
Combine all sauce ingredients in a sauce pan and bring to the boil. Simmer for about 10 minutes or until the onions are cooked then remove from heat.
Pour the liquid over fish and serve hot, or allow fish to steep for 12 hours and serve cold.
